Sweet Potatoes

Sid and I dug up a sweet potato plant a month ago to see what they were doing. While we were eating the delicious potatoes it occured to us we hadn't taken a picture. So today we went out and dug up the remaining 8 plants. Some did better than others. I know you were just waiting with baited breath to see how the sweet potatoes did. ha ha :)






As you can see I damaged them in the digging so we are having the worse damaged one for lunch.

Those potatoes are HUGE! They remind me of the carrots that we grew one year that look like they were the size of those potatoes. I bet they taste great!

So I am wondering how do you eat them, do you bake them and eat with butter or what? I have heard that the sweet potato has more vitamins and things that are good for you than any other veggie??? Not sure, looks like you had a good crop.

Lora, I never ate sweet potatoes until we lived here. I was standing in line one day with a 5 pound bag of carrots and a lady asked me what in the world I did will all those carrots? She had a bag of sweet potatoes twice as big as my carrots and I asked her what in the world she did with her sweet potatoes? But really, mom taught me the best way to eat them. She boils them like you would for mashed potatoes and then she mashes them puts butter and cinnamon on them. Yummy!! I just bought some at the store, I should have had gone and gotten some from mom!!! They look good mom.
